A pinch Hing (Asafoetida)
2 medium Onion (finely chopped)
2 large Tomatoes (chopped)
1-2 Green Chili (chopped)
4 tbsp Chole Masala
1 tsp Coriander Powder
1 tsp Red Chili Powder
½ tsp Black Pepper Powder
½ tsp Chaat Masala
½ tsp Amchur Powder (Dry Mango Powder)
1 tbsp Besan (Gram Flour)
Water – As needed
2 cups Boiled Chickpeas (Chole)
Salt – As per taste
Fresh Coriander Leaves (for garnish)

Heat oil and ghee in a deep wok or kadhai.

Add ajwain and a pinch of hing, letting them sizzle for a few seconds.

Add chopped onions and sauté on medium heat until golden brown.

Add chopped tomatoes and green chili, mixing well, and cook until the tomatoes soften completely.

Add chole masala, coriander powder, red chili powder, black pepper powder, chaat masala, and amchur powder, mixing well to coat everything evenly.

Add besan (gram flour) and roast it for a minute until its raw smell disappears.

Pour in a little water and cook the spice mixture until everything blends into a thick, aromatic masala.

Add boiled chickpeas (chole) and mix well, mashing some directly in the kadhai to thicken the gravy while keeping some whole for texture.

Add salt as per taste and let everything simmer for a few minutes to infuse flavors, adjusting water if needed.

Garnish with freshly chopped coriander leaves and bring to a gentle boil.
