1-1/2 tbsp Oil
2 inch Cinnamon Sticks
3 Cloves
1 tsp Cumin Seeds
2 Onions (sliced)

1 tbsp Garlic (chopped)
1 tbsp Ginger (julienne)
1 cup Fenugreek Leaves (washed)
3 Tomatoes (pureed)
1 tbsp Chole Masala Powder
1/2 tsp Coriander & Cumin Seed Powder
1/2 tsp Kashmiri Red Chilli Powder
1/4 tsp Turmeric Powder
3 Green Chillies (slit)
1/4 tsp Sugar
1/2 cup Chickpeas (soaked & pressure cooked)
1 tbsp Coriander Leaves (chopped)
1/2 tsp Dried Fenugreek Leaves

Heat oil in a pan and add cinnamon sticks, cloves, and cumin seeds. Sauté until fragrant.

Add sliced onions and sauté until golden brown.

Stir in chopped garlic and julienned ginger, cooking until aromatic.

Add washed fenugreek leaves and cook until wilted.

Mix in pureed tomatoes and cook until the oil separates.

Add chole masala powder, coriander & cumin seed powder, Kashmiri red chilli powder, turmeric powder, and sugar. Stir well.

Add the soaked and pressure cooked chickpeas and salt to taste. Mix thoroughly.

Simmer for a few minutes to allow flavors to meld.

Garnish with chopped coriander leaves and dried fenugreek leaves before serving.
