Methi Chole

2 Cup Boiled chole
1-1.5 Cup Methi Leaves
1 Onion, Chopped
1 Tomato (PASTE)
1 tsp Cumin Seeds
1 Bay Leaf
1 tsp Ginger
1 tsp Garlic (GRATED)
1/4 tsp Turmeric (POWDER)
1/2 tsp Red Chilli
1 tsp Coriander
Salt to Taste
1 tsp Oil
1 tsp Garam Masala

Boil the chana / chole and pluck methi leaves.

Heat oil in a pan.

When oil is medium hot, add cumin seeds and bay leaf, then add chopped onion.

When onion turns golden brown, add ginger and garlic paste and stir for a few minutes until the smell of raw ginger and garlic is gone.

Add dry spices: turmeric powder, coriander powder, and red chilli powder. Mix all masala and add tomato paste and some water to prevent sticking.

Add salt and cook for 2-3 minutes.

Add methi leaves, stir, and add ½ cup water (or adjust according to need).

Add boiled chole and cook for another 2-3 minutes.

Finally, add garam masala. Methi Chole curry is ready to eat.
