1 Cup Chick Peas (Chole)
1 Cup Onion
5 Garlic Pods
1 inch Ginger
2 Tomatoes (med.)
2 Green Chilli
1 Red Chili
4 Tbsp Oil
1 inch Cinnamon
1 Black Cardamom
2 Green Cardamom
3 Cloves
1 Bay Leaf
2 Tbsp Curd
1/2 Tsp Turmeric Powder
1 Tsp Chili Powder
1 Tsp Coriander Powder
1 Tsp Fennel Powder
1 Tsp Garam Masala Powder
1/8 Tsp Asafoetida
2 Cups Methi Leaves (Fenugreek Leaves)

Soak the chickpeas overnight and boil them until soft.

Heat oil in a pan and add the whole spices (cinnamon, black cardamom, green cardamom, cloves, bay leaf).

Add chopped onions and sauté until golden brown.

Add minced garlic and ginger, and sauté for a minute.

Add chopped tomatoes, green chilies, and red chili; cook until tomatoes soften.

Stir in turmeric powder, chili powder, coriander powder, fennel powder, and asafoetida; mix well.

Add the boiled chickpeas and mix to coat with spices.

Add methi leaves and cook until they wilt.

Stir in curd and garam masala powder; cook for a few more minutes.

Finish with aamchur powder and adjust seasoning.
