Chickpeas (chole) - 250 g (soaked)
Fenugreek leaves (methi) - 250 g
Oil - 4 tbsp + 1 tsp
Baking soda - 1/4 tsp
Bay leaves - 2
Star anise - 1
Cinnamon stick - 1 inch
Cumin seeds - 1/2 tsp
Chopped onion - 2 (medium size)
Ginger-garlic paste - 1 tbsp
Green chillies - 2-3
Chopped tomatoes - 3 (medium size)
Turmeric - 1/2 tsp
Red chilli powder - 1 tsp
Kashmiri chilli powder - 1 tsp
Coriander powder - 1 tbsp
Cumin powder - 1 tsp
Asafoetida (hing) - 1/4 tsp
Sugar - 1/2 tsp
Chole masala - 2 tbsp
Coriander leaves (chopped) - 1/2 cup
Kasoori methi - 1 tsp (roasted)
Salt to taste
Water - 3 cups

Soak the chickpeas overnight and then boil them until soft.

In a pan, heat oil and add bay leaves, star anise, cinnamon stick, and cumin seeds.

Add chopped onions and sauté until golden brown.

Stir in ginger-garlic paste and green chillies, cooking until fragrant.

Add chopped tomatoes and cook until they soften.

Mix in turmeric, red chilli powder, Kashmiri chilli powder, coriander powder, cumin powder, and asafoetida.

Add the boiled chickpeas, baking soda, and water, and stir well.

Season with salt, sugar, and chole masala, and let it simmer for a while.

Add fenugreek leaves and kasoori methi, cooking until the flavors meld together.

Garnish with chopped coriander leaves before serving.
