Knead the mixture into a soft dough, ensuring it is not too stiff.

3

Cover the dough with a wet cloth and let it ferment until it rises.

4

Prepare the chickpeas by soaking them overnight and then pressure cooking them with tea leaves and dried amla for color.

5

Heat oil in a non-stick pan and sauté chopped onions and green chilies until the onions are golden.

Add chana masala and mix well, then add tomato puree and cook for 3-4 minutes.

7

Incorporate the boiled chickpeas and some reserved cooking water, simmering for 4-5 minutes.

8

In another pan, heat oil and fry the cubed potatoes until golden and crispy.

Roll out the fermented dough into small balls and flatten them to form bhature.

10

Place the bhature on a baking tray and bake in a preheated oven at 200 degrees Celsius for about 15 minutes.
