1 cup Chickpea (Chana), soaked overnight
1/4 teaspoon Baking soda
1/2 teaspoon salt
1 cup Tea (made with 1 teaspoon tea powder)
2 tablespoons Oil
1 Onion, finely chopped
1 teaspoon Ginger garlic paste
2 Tomatoes, pureed
1 1/2 teaspoons Coriander powder
1 1/2 teaspoons Kashmiri chilli powder
1/4 teaspoon Turmeric powder
1/4 teaspoon Roasted cumin powder
1/4 teaspoon Garam Masala
salt to taste
1/2 teaspoon Sumac powder
2 tablespoons Cow Ghee (for tadka)
2 Green chillies
ginger (for tadka)
1 pinch Hing (Asafoetida)
1/4 teaspoon Chilli powder (for tadka)

Soak chickpeas overnight.

In a pot, add soaked chickpeas, baking soda, and tea. Cook until soft.

In a pan, heat oil and add finely chopped onion. Sauté until golden brown.

Add ginger garlic paste and sauté for a minute.

Stir in pureed tomatoes and cook until oil separates.

Add coriander powder, Kashmiri chilli powder, turmeric powder, roasted cumin powder, garam masala, and salt. Mix well.

Add cooked chickpeas to the mixture and combine.

For tadka, heat cow ghee in a separate pan, add green chillies, ginger, hing, and chilli powder. Pour over the chickpea mixture.
