Pindi Chole

1 cup kabuli chana (Small)
4 medium tomatoes
3 medium onions
3 green chilies
4 inch ginger
6-7 pods garlic
3 tbsp fresh coriander
3 tbsp oil
2 tbsp butter
3 tsp Kashmir red chili
2 tsp chole masala
3 tsp coriander powder
3 tsp anardana powder
salt to taste
2 tsp kasoori methi
4 tsp tea leaves
1 tsp sweet soda
2 bay leaves
4 cloves
4 black peppercorns
1 black cardamom
1 cinnamon stick

Soak the kabuli chana overnight and boil until tender.

In a pan, heat oil and butter, then add chopped onions, green chilies, ginger, and garlic, sautéing until golden brown.

Add chopped tomatoes and cook until soft.

Stir in Kashmir red chili, chole masala, coriander powder, anardana powder, and salt, cooking for a few minutes.

Add the boiled kabuli chana and mix well.

In a separate pot, boil water with tea leaves, bay leaves, cloves, black peppercorns, black cardamom, and cinnamon stick to create a tea infusion.

Add the tea infusion to the chana mixture, along with kasoori methi and sweet soda, and simmer for a while.

Garnish with fresh coriander before serving.
