Wash the chitterlings very well, removing any fat stuck to the edge.

Use a sharp knife to clean the casing without cutting through it.

Turn the gut inside out and wash it thoroughly.

Place the chitterlings in a bowl and add 2 tablespoons of salt and lemon juice; mix well.

Let the chitterlings rest for 2 to 3 hours to cure.

In a bowl, combine minced meat, chopped onion, chopped tomatoes, cooked chickpeas, washed rice, chopped parsley, teaspoon of salt, allspice, ground coriander, and mix well.

Let the filling rest for at least an hour.

Use a stuffer, bottle, or funnel to fill the chitterlings with the mixture, tying them off securely but not too tightly to allow for expansion.

In a pot, add three quarters of water, the remaining quartered tomatoes, quartered onions, chopped peppers, 1 tablespoon of salt, and 1 tablespoon of mint; bring to a boil.

Once boiling, add the chitterlings, cover, and cook for about 45 minutes.

Cut the cooked chitterlings into portions and serve with white rice or couscous.
