3 tbsp olive oil
2 medium onions
1 tbsp garlic paste
1 tbsp ginger paste
2 tbsp salt
1 tbsp black pepper powder
1 tbsp white pepper powder
11 cardamom pods

3 bay leaves
2 cups tomato puree
9 liters water
1 tbsp turmeric powder
2 tsp coriander powder
4-5 green chilies
2 carrots

Cut 2 kg of mutton into pieces and wash thoroughly.

Soak the mutton in water for 20-25 minutes.

In a pan, heat 3 tbsp of olive oil.

Add 2 medium-sized chopped onions and fry until soft.

Add 1 tbsp garlic paste and 1 tbsp ginger paste, and fry for a minute.

Mix in 2 tbsp salt, 1 tbsp black pepper powder, and 1 tbsp white pepper powder.

Add 11 cardamom pods, 16 cloves, 2 pieces of cinnamon, and 3 bay leaves, then mix.

Stir in 2 cups of tomato puree and 9 liters of water, and bring to a boil.

Cover and cook for 45 minutes until the meat is tender.

Add 1 tbsp turmeric powder, 2 tsp coriander powder, and 4-5 green chilies, and cook for 2-3 minutes.

Drain the soaked rice and add it to the pot, mixing gently.

Add boiling water until the rice is submerged.

Cook on medium-high heat until 80% of the water is absorbed, then cover and steam for 15 minutes.

In another pan, heat 1 tbsp of oil and fry sliced onions until golden brown.

Fry soaked almonds, raisins, and dried cranberries for 1-2 minutes.

Top the cooked rice with fried onions, almonds, raisins, and garnish with fresh coriander.
