Soak bulgur wheat in warm water for 20-30 minutes.
Drain the bulgur wheat.
Chop 2 bunches of parsley and mint leaves.
Dice 2 small cucumbers and 2 tomatoes into small pieces.
Finely chop 3-4 spring onions.
Combine bulgur, parsley, mint, cucumbers, tomatoes, and spring onions in a large bowl.
Drizzle with juice of 2 limes and 60 ml olive oil.
Season with salt and half teaspoon black pepper to taste.
Toss gently to mix all ingredients evenly.
