Knafeh

Knafeh is a beloved dessert originating from the Levant region, particularly associated with Syrian and Palestinian cuisine. Traditionally served during celebrations and special occasions, this sweet pastry features layers of shredded dough filled with cheese and soaked in fragrant syrup. Today, variations of knafeh can be found worldwide, with each region adding its unique twist to this classic treat.

1/2 cup water
1/2 cup sugar
1 tbs rose water
1 tsp lemon juice
125g Mozzarella cheese ball
50g grated mozzarella
150g of Kunafa pastry
4 tbs melted butter or ghee
crushed pistachio nuts
clotted cream

1. Prepare the sugar syrup by combining 1/2 cup water, 1/2 cup sugar (or up to 3/4 cup for a sweeter taste), 1 tbs rose water, and 1 tsp lemon juice.

2. For the cheese mixture, use 125g of mozzarella cheese ball and 50g of grated mozzarella. You can also substitute with akawi cheese, string cheese, or ricotta cheese.

3. Take 150g of Kunafa pastry and mix it with 4 tbs of melted butter or ghee.

4. Assemble the mixture in an 8 inch round cake tin and bake at 200°C (gas mark 6) for 25 to 30 minutes.

5. Serve immediately while hot, drizzled with the sugar syrup and decorated with crushed pistachio nuts. It can be served with clotted cream or ice cream.
