Knafeh

1 cup water
1 cup sugar
2 tablespoons rose water
2 tablespoons lemon juice
8 oz mozzarella cheese
8 oz grated mozzarella
8 oz akawi cheese
8 oz string cheese
15 oz ricotta cheese
1 lb kataifi pastry
1/2 cup butter
1/4 cup ghee
1/2 cup pistachio nuts
1/2 cup clotted cream
2 scoops ice cream

Preheat the oven to 350°F (175°C).

Melt the butter and ghee in a saucepan over low heat.

Shred the kataifi pastry into small pieces and place in a large bowl.

Pour the melted butter and ghee over the kataifi pastry and mix until well coated.

Spread half of the buttered kataifi pastry evenly in a greased baking dish.

In a separate bowl, combine ricotta cheese, mozzarella cheese, akawi cheese, string cheese, and a pinch of salt.

Spread the cheese mixture over the kataifi pastry layer in the baking dish.

Top with the remaining kataifi pastry, pressing down gently.

Bake in the preheated oven for 30-40 minutes, until golden brown.

While baking, prepare the syrup by combining sugar, water, and lemon juice in a saucepan.

Bring the syrup to a boil, then reduce heat and simmer for 10 minutes.

Remove from heat and stir in rose water.

Once the knafeh is baked, remove it from the oven and immediately pour the syrup over it.

Let it soak for 10-15 minutes before serving.

Garnish with crushed pistachio nuts and a sprinkle of cinnamon.
