Knafeh

Traditionally served during celebrations and special occasions, this sweet pastry features layers of shredded dough filled with cheese and soaked in fragrant syrup. Today, variations of knafeh can be found worldwide, with each region adding its unique twist to this classic treat.

150 gms akkawi cheese
150 gms shredded phyllo dough
1/2 cup sugar
1/2 cup water
rose essence
lemon
2 tbsp pistachios
3 tbsp ghee

1. Mix the sugar and water in a saucepan and heat until the sugar dissolves to create a simple syrup. Add a few drops of rose essence and lemon juice to the syrup and set aside.

2. In a pan, melt the ghee and add the shredded phyllo dough, stirring until it is well coated and golden brown.

3. Layer half of the phyllo dough in a greased pan, then add a mixture of akkawi cheese and string cheese on top.

4. Cover the cheese layer with the remaining phyllo dough and press down gently.

5. Cook on the stove top over low heat until the bottom is golden and the cheese is melted.

6. Once cooked, invert the knafeh onto a plate and pour the rose water syrup over it.

7. Garnish with crushed pistachios before serving.
