8 oz kataifi pastry
1/2 cup butter
1 cup sugar
1/2 cup water
1 tablespoon rose water
1 tablespoon orange blossom water
1 cup ricotta cheese
1 cup mozzarella cheese
1/2 cup pistachios
1 teaspoon cinnamon
1 teaspoon vanilla extract
1/2 teaspoon salt
2 tablespoons lemon juice
a few drops food coloring

Preheat the oven to 350°F (175°C).

Melt the butter in a saucepan over low heat.

Shred the kataifi pastry into small pieces and place in a large bowl.

Pour the melted butter over the kataifi pastry and mix until well coated.

Spread half of the buttered kataifi pastry evenly in a greased baking dish.

In a separate bowl, combine ricotta cheese, mozzarella cheese, and a pinch of salt.

Spread the cheese mixture over the kataifi pastry layer in the baking dish.

Top with the remaining kataifi pastry, pressing down gently.

Bake in the preheated oven for 30-40 minutes, until golden brown.

While baking, prepare the syrup by combining sugar, water, and lemon juice in a saucepan.

Bring the syrup to a boil, then reduce heat and simmer for 10 minutes.

Remove from heat and stir in rose water and orange blossom water.

Once the knafeh is baked, remove it from the oven and immediately pour the syrup over it.
