Knafeh

Traditionally served during celebrations and special occasions, this sweet pastry features layers of shredded dough filled with cheese and soaked in fragrant syrup. Today, variations of knafeh can be found worldwide, with each region adding its unique twist to this classic treat.

12 oz (340 g) Kataifi dough
½ cup (113 g) Melted butter
½ teaspoon Orange powdered food color (Optional)
8 oz (226 g) Akawi cheese (shredded or more mozzarella)
4 oz (113 g) Mozzarella cheese (drained and shredded)
4 oz (113 g) Panella cheese (shredded)
¼ cup (50 g) Sugar
¾ cup (175 ml) Water
1 cup (200 g) Sugar
1 tablespoon Rose water
2 tablespoon Orange blossom water
2 tablespoon Lemon juice
2 tablespoon Soft butter
½ teaspoon Orange or red powdered food color
½ cup (70 g) Crushed nuts (pistachio, walnuts, etc)

Preheat the oven.

In a bowl, combine the Kataifi dough with melted butter and optional food color.

In another bowl, mix the Akawi cheese, mozzarella cheese, Panella cheese, and sugar to create the cheese filling.

Prepare the sugar syrup by boiling water, sugar, rose water, orange blossom water, and lemon juice until it thickens slightly.

In a baking pan, spread some soft butter and layer half of the Kataifi dough mixture.

Add the cheese filling on top of the dough layer.

Cover with the remaining Kataifi dough mixture and drizzle with more melted butter.

Bake in the oven until golden brown.

Once baked, pour the sugar syrup over the hot Knafeh and let it soak.

Garnish with crushed nuts before serving.
