3 cups sugar (600g)
2 cups water (500 ML)
1/8 tsp citric acid
1/2 tsp orange blossom water
75 g soft unsalted butter
450 g kataifi dough
600 g fresh mozzarella cheese

Prepare the sugar syrup by combining 3 cups sugar, 2 cups water, 1/8 tsp citric acid, and 1/2 tsp orange blossom water in a saucepan. Bring to a boil and then let it cool.

Grease the baking pan with 75 g of soft unsalted butter.

Take 450 g of thawed kataifi dough and spread it evenly in the greased pan, pressing down firmly. You can use a pot filled with water for extra weight while pressing.

Layer 600 g of fresh mozzarella cheese over the kataifi dough.

Bake the assembled knafeh until golden brown and crispy.

Once baked, pour the cooled sugar syrup over the knafeh and let it soak before serving.
