Prepare the dough by mixing 2 cups of flour, 1 teaspoon of salt, and some olive oil.
Add warm water and knead the dough until it comes together.
Cover the dough with cling film and let it rest for 10 to 15 minutes.
Lightly flour a surface and roll out the dough until thin.
Cut the dough into rings.
Bake the larger rings until crispy for decoration.
Fry onion slices in vegetable oil until golden brown, saving some for decoration.
Soak tamarind in water, boil and simmer for 10 minutes, then strain to extract juice.
Boil 3 cups of washed brown lentils in 5 cups of water until soft and three-quarters cooked.
Heat olive oil in a pan, add crushed garlic and coriander, and sauté.
Add the tamarind sauce to the lentils, stir in salt, and boil for 10 minutes.
Add the dough rings in batches to the lentils, stirring to prevent sticking, and add more hot water if needed.
Stir in fried onions and garlic with coriander, adjust salt and sourness to taste.
Scoop into serving plates or bowls and refrigerate until cold.
Decorate with baked dough, fried onions, garlic, and coriander.
