Shell the pistachios if not already shelled.

Place the shelled pistachios into a saucepan of cold water and bring to a boil.

Once boiled, remove from heat to help remove the brown skin from the pistachios.

Transfer the warm pistachios to a blender (or food processor) and blend for two 45-second intervals, shaking halfway through to mix.

In a pan, combine milk white chocolate and butter, melting it gently without boiling.

After melting, let it sit for a couple of minutes before adding it to the blender with the pistachio paste and blend again for two 45-second intervals until smooth.

Immediately transfer the blended mixture to a bowl to prevent it from setting in the blender.

Cover the surface of the pistachio filling with cling film to prevent browning as it cools.

Using a thermometer, melt 70% dark chocolate over a double boiler until it reaches 115-120°F.

Remove from heat and add the remaining chocolate to cool it down to around 83-85°F.

Return to heat for 30 seconds to bring it back to a working temperature, not exceeding 5°F increase.

Using a half spherical mold, coat the mold with the tempered chocolate, pouring off the excess.

Refrigerate the coated molds for 20-30 minutes to set.

Fill a piping bag with the pistachio filling and cut the end off to pipe into the chocolate shells.

Top the filled shells with more tempered chocolate and smooth it out.

Return to the fridge for at least 1-2 hours to fully set.
