Preheat the oven to 350°F.
Line a 9x13 casserole dish or cake pan with parchment paper.
Grind 1 cup of organic rolled oats in a blender to make a rough flour (not too fine).
In a bowl, combine the ground oats, 1 cup of almond flour, 1/2 cup of cocoa powder, 1 teaspoon of vanilla powder, 1 1/2 teaspoons of baking powder, and 3/4 teaspoon of baking soda. Whisk together to remove clumps.
In a blender, combine 1/2 cup of dates, 1 tablespoon of white wine vinegar, and 1 cup of unsweetened soy milk. Blend until dates are completely pulverized.
Pour the blended mixture into the bowl with the dry ingredients and mix until combined.
Pour the cake batter into the lined 9x13 pan, ensuring the parchment paper is pressed down into the corners.
Bake the cake in the preheated oven for 38 minutes.
For the pistachio cream, shell 1 cup of pistachios (to maintain bright green color).
In a blender, combine the shelled pistachios, 1/2 cup of cashews, 1/3 cup of dates, and 1/2 cup of water. Blend until thick, scraping down the sides as needed. It can be left slightly chunky for texture.
For the chocolate ganache, blend together 1/2 cup of dates, 1/4 cup of cashews (or almonds), 3 tablespoons of cocoa powder, 1 teaspoon of vanilla, 1/2 cup of water, and 1/4 cup of unsweetened soy milk until silky smooth. If necessary, strain through a sieve for a smoother consistency.
Once the cake is baked and still hot, spread the pistachio cream layer on top.
Finally, pour the chocolate ganache over the pistachio cream layer.
