full-fat milk

🥗Healthier: low-fat milk

💰Cheaper: evaporated milk

Low-fat milk reduces calories while still providing creaminess.

sugar

🥗Healthier: honey

💰Cheaper: jaggery

Honey offers a natural sweetness with potential health benefits.

saffron

💰Cheaper: turmeric

Turmeric provides color but lacks saffron's unique flavor.

chopped nuts

🥗Healthier: seeds

💰Cheaper: dried fruits

Seeds can be a healthier option while dried fruits add sweetness.

1

Boil a little more than 1 liter of milk in a heavy-bottomed pan, stirring continuously.

2

Add saffron and cardamom to the boiling milk.

3

After about 10 minutes, when the milk reduces, add 1 cup of milk powder gradually.

4

Stir and cook for another 5-7 minutes until thickened.

5

Add 5-6 tablespoons of condensed milk according to your sweetness preference and cook for an additional 3-5 minutes until it reaches a rabri-like consistency.

6

Let the rabri cool for about 50 minutes.

7

Prepare a cake mixture by mixing 1/3 cup oil, 1/2 cup yogurt, and 1/2 cup sugar until well combined.

8

Add 1 cup of flour, a pinch of baking soda, and a pinch of baking powder, mixing thoroughly.

9

Gradually add room temperature milk to the batter until it reaches a ribbon-like consistency.

10

Steam the cake mixture for 20-25 minutes or bake in the oven if preferred.

11

Once the cake is ready, press it down and pour the rabri over it while it's still warm so it absorbs the rabri.

12

Garnish with crushed pistachios and rose petals.

13

Chill in the refrigerator for 2 hours before serving.
