Preheat the oven to 180°C (350°F).
Peel and slice onions thinly.
Heat butter and olive oil in a skillet over medium heat.
Add onions and cook until caramelized, about 15-20 minutes, stirring occasionally.
In a large bowl, combine ground beef, breadcrumbs, egg, parsley, garlic, mustard, salt, black pepper, paprika, and thyme.
Mix until well combined and form into a loaf shape.
Place the meatloaf in a baking dish.
Pour beef broth around the meatloaf and add bay leaves.
Bake in the preheated oven for 50-60 minutes, until cooked through.
Remove from the oven and let rest for 10 minutes before slicing.
Serve topped with caramelized onions and a dollop of sour cream.
