1

Wash your hands.

2

Mash fresh raspberries and fresh blueberries with a fork.

3

Sprinkle a spoonful of icing sugar on top of the mashed berries.

4

Cover with a clean tea towel and put aside for later.

5

Grease a shallow oven proof dish with soft salted butter, making sure to cover it really well.

6

Pour whole milk into a jug.

7

Crack 5 eggs one by one into a mug, check for shell, and pour each yolk into an egg cup, trapping the yolk.

8

Tip the egg whites into a bowl and add the yolks to the milk jug.

9

Wipe your hands after touching raw egg.

10

Whisk all the egg yolks together with a spring whisk.

11

Sift self-raising flour into another bowl and add caster sugar, then mix it together.

12

Gradually add the milk and egg mixture bit by bit, mixing as you go to make a smooth batter.

13

Use the edge of a teaspoon to scrape the seeds out of a vanilla pod and add them to the bowl, then mix again.

14

Put the bowl of egg whites onto a clean damp tea towel to stop it from slipping.

15

Use a handheld rotary whisk to whisk the egg whites until they are light and fluffy.

16

Add 2 spoons of the foamy egg white to your batter and mix it in.

17

Add the rest of the egg whites and gently mix it with a spoon, twisting and turning to make the shape of a number eight.

18

Pour the batter into the buttered dish and ask a grown-up to put it in the oven.

19

When the Kaiserschmarren is cooked and slightly cooled, it will have risen and turned golden brown.

20

Add a spoon of ground sweet cinnamon to icing sugar and mix it together.

21

Ask a grown-up to shred the Kaiserschmarren using two forks.

22

Sprinkle on the icing sugar mixture and serve with the mashed berries from earlier.
