Sushi Bowl

2 cups sushi rice
2 1/2 cups water
1/2 lb sushi-grade salmon, diced
1 cucumber, julienned
1 avocado, sliced
1/2 lb kani, diced
1/4 cup crunchy fried onions
1/4 cup teriyaki sauce
2 tbsp soy sauce
1/4 cup pickled ginger

Rinse the sushi rice under cold water until the water runs clear.

In a rice cooker, combine the rinsed rice and water. Cook according to the rice cooker instructions.

In a small saucepan, heat teriyaki sauce over low until warm. Remove from heat.

Once the rice is cooked, transfer it to a large bowl and let it cool to room temperature.

In serving bowls, place a scoop of sushi rice as the base.

Top the rice with diced salmon, diced kani, avocado slices, and cucumber.
