Teriyaki Tofu Sushi Bowl is a modern fusion dish that combines traditional Japanese flavors with a plant-based twist, making it popular among vegans and health-conscious eaters.

Ingredients

  • โ—1 cup sushi rice
  • โ—1 1/4 cups water
  • โ—1 block (14 oz) firm tofu, drained and pressed
  • โ—1/4 cup soy sauce
  • โ—1/4 cup mirin
  • โ—2 tbsp brown sugar
  • โ—1 tbsp sesame oil
  • โ—1 avocado, sliced
  • โ—1/2 cucumber, julienned
  • โ—1 carrot, shredded
  • โ—2 green onions, sliced
  • โ—1 tbsp sesame seeds
  • โ—Nori sheets, for serving (optional)

Instructions

  1. 1Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions.
  2. 2While the rice is cooking, prepare the teriyaki sauce. In a small saucepan, combine soy sauce, mirin, brown sugar, and sesame oil. Heat over medium heat until the sugar dissolves, then remove from heat.
  3. 3Cut the pressed tofu into cubes. In a non-stick skillet, heat a little oil over medium heat and add the tofu. Cook until golden brown on all sides, about 8-10 minutes.
  4. 4Pour the teriyaki sauce over the cooked tofu and let it simmer for a few minutes until the sauce thickens slightly and coats the tofu.
  5. 5Once the rice is cooked, fluff it with a fork and let it cool slightly.
  6. 6To assemble the sushi bowl, divide the rice among serving bowls. Top with the teriyaki tofu, avocado slices, cucumber, carrot, and green onions.
