Tofu Steaks with Kabayaki Sauce

Cultural Context

Originating from Japan, kabayaki refers to a cooking technique where fish or tofu is grilled and glazed with a sweet soy sauce. This dish celebrates the umami flavors of soy and mirin, making it a popular choice in Japanese cuisine. Today, variations of kabayaki can be found globally, often featuring different proteins or plant-based alternatives.

Servings4
1 block firm tofu (19 ounces)
2 tablespoons mirin
3 tablespoons shoyu soy sauce
1 tablespoon sake
a couple drops of honey (about 1/4 teaspoon)
potato starch
3 tablespoons olive oil
1 tablespoon fresh ginger
green onion
toasted sesame seeds
1

Remove excess water from the tofu by microwaving it for about 2 minutes and 30 seconds, adjusting time based on microwave strength.

2

Mix together the sauce ingredients: 3 tablespoons soy sauce, 2 tablespoons mirin, 1 tablespoon sake, and a couple drops of honey.

3

Dredge the tofu steaks on both sides with potato starch, ensuring they are lightly coated.

4

Preheat a large cast iron pan and add about 3 tablespoons of olive oil.

5

Cut the tofu into squares about half an inch thick after microwaving and pat dry to remove excess moisture.

6

Saute the tofu steaks in the preheated pan until they are lightly browned on both sides, not dark brown.

7

Once the tofu is browned, add half of the sauce to the pan and coat the tofu steaks, flipping them to ensure even coverage.

8

Reduce heat if necessary to prevent the sauce from burning, and cook until the sauce thickens and absorbs into the tofu.

9

Plate the tofu steaks and garnish with toasted sesame seeds, sliced green onion, and grated ginger.
