Honey Jerk Lamb Chops

Originating from Jamaica, jerk seasoning is a hallmark of Caribbean cuisine, traditionally used to flavor meats cooked over an open flame. The combination of spices and the sweet notes from honey create a delicious contrast, making these lamb chops a favorite for special occasions. Today, jerk flavors have transcended borders, inspiring variations across the globe, from grilled chicken to seafood dishes.

Prep lamb chops by slicing between the bones of a full rack to create individual chops.
In a mixing bowl, combine 1/4 cup brown sugar, juice of 1 lime, 1/4 cup low sodium soy sauce, 1 tablespoon garlic paste, 1 tablespoon ginger paste, 1 tablespoon and 1/2 jerk marinade, 1 tablespoon green seasoning, and 1 teaspoon ground allspice to create the marinade.
Clean lamb chops with lime juice and add them to the marinade, ensuring they are well coated.
Let lamb chops marinate for at least 30 minutes, preferably 2 to 3 hours or overnight if possible.
In a saucepan, melt 2 tablespoons of butter and mix in 1/4 cup brown sugar, 1/4 cup low sodium soy sauce, 1 tablespoon jerk paste, 1 teaspoon garlic paste, 1 teaspoon ginger paste, juice of half a lime, and 1/4 cup honey. Add a pinch of cinnamon and optional red pepper flakes for heat, then let it reduce until thickened.
Heat a skillet over medium-high heat and add 1 tablespoon of avocado oil to coat the bottom.
Remove excess marinade from lamb chops and sear them in the skillet for about 1-2 minutes per side until browned.
Transfer seared lamb chops to a wire rack, brush with the prepared sauce, and place under the broiler for 3-4 minutes to finish cooking.
Plate the lamb chops with the remaining sauce and serve.
