2 eggs

1 cup spelt flour

Blend 1 cup cottage cheese, 2 eggs, 1-2 teaspoons maple syrup, and 1 teaspoon vanilla extract until smooth.

Add 1 cup spelt flour, a pinch of salt, 1 teaspoon baking powder, and 1 teaspoon cinnamon to the blender.

Blend the mixture again, being careful not to over mix to keep the pancakes light and airy.

Heat a pan over medium heat and lightly coat it with olive oil or cooking spray.

Pour about 1/4 cup of batter onto the pan and cook the pancakes until bubbles form on the surface and the edges start to set, usually around 1-2 minutes.
