Cottage Cheese Pancakes

1 cup almond flour
1 tsp baking powder
1/4 tsp cinnamon powder
2 tbsp almond milk or cow milk
1 tsp vanilla extract
2 large eggs
1/4 tsp salt
2 tbsp maple syrup
2 tbsp butter or vegetable oil
For topping: maple syrup, butter, blueberries, blackberries, strawberries, bananas

In a bowl whisk all wet ingredients: milk, eggs, vanilla essence, and melted butter. Whisk until well combined.

Add flour, baking powder, salt, and cinnamon powder to the wet ingredients.

Mix all ingredients well, but do not overmix the batter.

Heat a lightly oiled frying pan over medium heat. Pour a scoop or 1/4 cup of batter for each pancake.

Brown both sides and serve hot with chocolate syrup, maple syrup, fresh whipped cream, or some berries.
