Cottage Cheese Pancakes

1 cup cottage cheese
1/2 cup oat flour

In a mixing bowl, combine the cottage cheese, eggs, milk, and vanilla extract. Mix well until smooth.

In another bowl, whisk together the flour, baking powder, salt, and sugar.

Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.

Heat a non-stick skillet or griddle over medium heat and add a little butter or oil.

Pour about 1/4 cup of the batter onto the skillet for each pancake.

Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2-3 minutes until golden brown.
