Cottage Cheese Pancakes

1/2 cup all-purpose flour
1 cup cottage cheese
2 large eggs
1 tbsp sugar
1/2 tsp vanilla extract
1/4 cup milk
1 tsp baking powder
1/2 tsp salt
1 tbsp butter or oil for cooking
1 cup fresh blueberries
for serving pancake syrup

Measure flour into a bowl.

Put cottage cheese and eggs into the blender.

Add sugar, vanilla extract, and water or milk to the blender.

Add baking powder and salt to the blender.

Blend for about 30 seconds until smooth.

Pour the blended liquid into the bowl with flour.

Mix the batter from the outside of the bowl in until smooth.

Heat up a non-stick skillet.

Grease the skillet with butter, oil, or spray.

Pour about a fourth of a cup of batter for each pancake onto the hot surface.

Wait for bubbles to form and edges to define before flipping pancakes.

Cook the second side for about two minutes without pressing down.

Transfer pancakes to a plate and add fresh blueberries and pancake syrup.
