Cottage Cheese Pancakes

1 cup cottage cheese
2 eggs
1-2 teaspoons maple syrup
1 cup spelt flour
pinch of salt
1 teaspoon baking powder
1 teaspoon cinnamon
olive oil (for cooking)
rolled oats (for gluten-free version)

Blend cottage cheese, eggs, vanilla extract, and sweetener (maple syrup) until smooth.

Add spelt flour, pinch of salt, baking powder, and cinnamon to the mixture and blend until just combined.

Heat a pan over medium heat and lightly coat it with olive oil or cooking spray.

Pour about 1/4 cup of batter onto the pan and cook the pancakes.

Flip the pancakes when bubbles form on the surface and edges start to set, usually around 1 to 2 minutes.

For the gluten-free version, blend rolled oats into a fine flour.
