Ingredients

  • 1 cup cottage cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp sugar
  • 1/2 tsp vanilla extract
  • Butter or oil for cooking

Instructions

  1. 1In a mixing bowl, combine the cottage cheese, eggs, milk, and vanilla extract. Mix well until smooth.
  2. 2In another bowl, whisk together the flour, baking powder, salt, and sugar.
  3. 3Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
  4. 4Heat a non-stick skillet or griddle over medium heat and add a little butter or oil.
  5. 5Pour about 1/4 cup of the batter onto the skillet for each pancake.
  6. 6Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2-3 minutes until golden brown.
  7. 7Repeat with the remaining batter, adding more butter or oil as needed.
  8. 8Serve warm with your choice of toppings such as syrup, fruit, or yogurt.
