Cottage Cheese Pancakes

2 eggs, separated
1/2 cup cottage cheese
Sweetener, optional
Maple syrup

Add 2 egg whites to a large bowl, or a mixer bowl. Whip until they form stiff peaks.

In a blender combine one egg yolk and cottage cheese. Blend until smooth.

Pour this into the egg whites and gently fold together to combine. DO NOT stir, you need to keep the bubbles in the egg whites.

Heat a pan over medium heat and lightly grease it.

Spoon the batter onto the pan and cook until bubbles come through to the top of the pancakes.

Flip and cook the other side for several minutes or until the pancakes have set.

Serve immediately and top with maple syrup or your desired toppings.
