Cottage Cheese Pancakes

110 g rolled oats
1 tsp baking powder
1/2 tsp baking soda
220 g cottage cheese
1/2 tbsp honey (optional)
Few drops of lemon juice

Process 110 g rolled oats in a blender for a few minutes until it becomes a fine powder.

Add 1 tsp baking powder and 1/2 tsp baking soda to the oat flour and mix.

In a separate bowl, combine 220 g cottage cheese, 1/2 tbsp honey (optional), and a few drops of lemon juice to activate the baking soda.

Add 2 eggs at room temperature to the cottage cheese mixture and blend for a few minutes until the cottage cheese is completely dissolved.

Combine the blended cottage cheese mixture with the oat flour mix and add 1 tsp vanilla extract.

Heat a non-stick pan over low-medium heat.

Pour 80 ml (2 scoops) of batter into the pan and cook with a lid for about 4 minutes at low-medium heat.

Cook the other side until golden.
