Caribbean Stewed Goat

Often prepared for special occasions and family gatherings, it's a symbol of hospitality and celebration. The dish showcases the use of bold spices and slow cooking techniques, making it a flavorful centerpiece. Today, variations can be found in many Caribbean communities, each adding their unique twist to this hearty meal.

Evaporated milk can mimic creaminess at a lower cost.
Prepare the marinade by adding onion, caraway seeds, whole cloves, rosemary, ginger, garlic, thyme, bell pepper, and celery into a blender.
Add avocado oil to the blender; blend the ingredients until smooth.
Wash the goat meat with vinegar and lemon, removing any excess fat.
Add the blended marinade to the goat meat.
Add lemon pepper, onion powder, garlic powder, adobo seasoning, sazon seasoning, soy sauce, turmeric, cumin, coriander, and dry Italian seasoning to the goat meat; mix thoroughly.
Heat avocado oil in the bottom of a pressure cooker pot to cover the bottom.
Chop garlic, onions, bell pepper, celery, carrots, and potatoes for the gravy.
Add sugar to the heated oil until it caramelizes; do not let it burn.
Add the goat meat to the pot and stir to combine with the caramelized sugar.
Pour preheated water into the pot until the meat is covered; also rinse the bowl with water to add any remaining marinade to the pot.
Cover the pressure cooker and pressurize the meat on medium-high for about 15 minutes, starting the timer when you hear the pressure sound.
After 15 minutes, remove the cover and check if the meat is tender; transfer the meat to a wider pot.
Add chopped potatoes, carrots, and remaining vegetables to the broth in the pot; stir to combine.
Cover and let simmer for about 15 minutes, checking for tenderness of the vegetables halfway through.
Remove some gravy and mix in tomato paste; add it back to the pot and let it cook for the remainder of the 15 minutes.
