1 large onion
4 cloves garlic
1 tablespoon grated ginger
2 teaspoons thyme
1 bell pepper
2 stalks celery

1 teaspoon sugar
1 teaspoon lemon pepper
1 teaspoon onion powder
1 teaspoon garlic powder
1 tablespoon adobo all-purpose seasoning
1 tablespoon sazon seasoning
2 tablespoons soy sauce
1 teaspoon turmeric
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon dry Italian seasoning
2 cups water
2 tablespoons tomato paste

Prepare the marinade by adding onion, caraway seeds, whole cloves, rosemary, ginger, garlic, thyme, bell pepper, and celery into a blender.

Add avocado oil to the blender; blend the ingredients until smooth.

Add chopped potatoes, carrots, and remaining vegetables to the broth in the pot; stir to combine.

Remove some gravy and mix in tomato paste; add it back to the pot and let it cook for the remainder of the 15 minutes.
