4 cups leftover rice
2 pcs regular hotdog, diced
2 eggs, beaten
1 tbsp salt
1 tsp ground black pepper
1 tbsp butter
3 tbsp cooking oil
1 tbsp soy sauce
1 head garlic, crushed

Gently mash the leftover rice using your hands.

Heat the 2 tbsp of cooking oil in a deep pan.

Once the oil becomes hot, fry the hotdog for 1 minute then add the garlic and sauté for 2 minutes or until golden brown. Then add the butter and melt it.

Add the rice. Cook for 5 minutes and stir occasionally.

Add 1 tsp salt, soy sauce and ground black pepper. Mix well.

Make space on center on the pan. Then add 1 tbsp of cooking oil on the middle, and pour-in the beaten eggs. Cook in low-medium heat and stir the egg until softly set.

Add scallion and mix well.

Transfer to a serving plate, share and enjoy!
