1/2 cup diced ham
1 cup frozen veggie mix (corn, carrots, peas, green beans)
1/2 red pepper (diced)
2 tablespoons soy sauce

1 tablespoon sesame oil (optional)
green onions (whites and greens separated)

Beat 2 eggs in a bowl using a whisk, moving it back and forth side to side.

Chop green onions, separating the white and green parts, and cut them into diagonal slices (shiftlets).

Cut the stem off a red pepper, remove seeds, and dice it into small pieces.

Steam 1/2 cup of Chinese sausage (lap chong) for 15 minutes, then cut into pieces.

Heat 1 tablespoon of oil in a pan over low heat and add the beaten eggs, stirring until just cooked but still slightly wet.

Turn the heat to high and add 2 cups of cold brown rice to the pan, along with 2 tablespoons of oil, stirring to break up lumps.

Add 1/2 cup of diced ham and the frozen veggie mix to the rice, stirring to combine.
