Jeera Aloo

3 large boiled potatoes
4 tbsp. cooking oil
1 tsp. cumin seeds
1/4 tsp. hing or asafoetida
1/2 tsp. turmeric powder
3 green chillies (chopped)
Salt (to taste)
1/2 tsp. amchur powder
coriander leaves (chopped)
Red chilli flakes (to taste)

Set a pan on medium heat and add 4 tablespoons cooking oil.

Add cumin seeds, turmeric powder, salt, hing, and chopped green chilies.

Once the cumin seeds start to splatter and gets darker brown in color, add boiled potatoes cut in thin long slices.

Stir fry the potatoes for approximately 7 to 10 minutes or until they brown nicely.

Add amchur powder and give it a quick stir.

Turn off the heat and garnish with lots of chopped coriander leaves.
