3 medium size potatoes (aloo), boiled
2-3 tbsp oil
1 tsp cumin (jeera)
1/8 tsp hing (asafoetida)
1 tsp kasuri methi
salt, as per taste
1/4 tsp turmeric powder
3/4 tsp chilli powder
1 tsp coriander powder (dhaniya)
1/2 tsp garam masala
1/2 tsp amchur powder
2-3 tbsp coriander leaves, chopped

Boil the potatoes and set aside.

Heat oil in a pan.

Add cumin seeds and let them splutter.

Add hing and stir briefly.

Add boiled potatoes and mix well.

Add kasuri methi, salt, turmeric powder, chilli powder, coriander powder, garam masala, and amchur powder.

Stir to combine all the spices with the potatoes.

Cook for a few minutes until the potatoes are well coated with spices.

Garnish with chopped coriander leaves before serving.
