Canned tuna is more affordable and still provides a seafood flavor.

Mix cold Atlantic shrimp with 3/4 cup mayonnaise and 1/2 cup sour cream in a bowl.

Add 1 tablespoon of Dijon mustard and stir.

Add 1 whole finely chopped red onion and mix.

Incorporate about 1/2 cup of chopped dill into the mixture.

Optionally add white fish roe for saltiness and crunch.

Set the shrimp mixture aside.

Cut the edges off good quality white bread.

Spray a hot saute pan with duck fat.

Place the bread in the pan and saute for a couple of minutes on each side until golden brown.

Plate the shrimp mixture on the toasted bread with a dollop on top.

Garnish with white fish roe, sprigs of dill, and a slice of lemon.
