Swedish Raspberry Cave Cookies

The combination of buttery dough and tart raspberry jam creates a perfect balance of flavors, making them a beloved treat. Today, they are popular not only in Sweden but also in various countries, often adapted with different fruit preserves.
Set butter out to soften before mixing.
In a bowl, mix together 2 cups of flour, 1 teaspoon of baking powder, and 1/2 cup of sugar.
Add 1 teaspoon of vanilla to the dry ingredients.
Incorporate 2 sticks of butter into the mixture and mix with hands until combined.
Roll the dough into a loaf shape.
Cut the dough into pieces about 1/2 inch to 1 inch thick.
Roll each piece into a ball, re-rolling if it breaks apart until it holds together.
Press down on the dough ball to flatten it.
Take another piece of pre-sliced dough, roll it around the flattened dough to form a cave shape.
Press down to create a dip in the center for the raspberry preserves.
Add raspberry preserves into the center of each cookie.
Place cookies in the oven at 400 degrees Fahrenheit for 15 minutes, monitoring to prevent burning.
Remove cookies from the oven and place on a baking rack to cool.
Taste the cookies and note their softness and texture.
