Heat a pan on the gas.

Add oil to the heated pan.

Once the oil is hot, add cumin seeds and let them crackle slightly.

Add finely chopped onion to the pan.

Sauté the onion on medium flame until it turns golden brown.

Once the onion is golden brown, add red chili powder.

Then add coriander powder, turmeric powder, and salt according to taste.

Add finely chopped green chilies and mix everything well.

To properly cook the spices, add a little water and mix again.

Add 1 tablespoon of ginger garlic paste and sauté with the spices.

Next, add chopped tomatoes and mix everything together.

Add a little more water to soften the mixture.

Once the mixture is well cooked, add boiled eggs.

Mix the eggs with the spices and mash them lightly for a tastier filling.

Add fresh coriander leaves and mix again.

At this stage, the egg masala filling is completely ready.

Take a separate bowl and break 1 egg into it.

Add a little salt and whisk the egg well.

Heat another pan and add ghee to it.

Once the ghee melts, place the ready-made paratha in the pan.

Fry the paratha well on both sides.

After frying the paratha, evenly spread the whisked egg on top.

Cook the paratha on low to medium flame until the egg is properly set.

Once the egg is cooked, remove the paratha from the pan and place it on a cutting board.

Add the prepared egg masala to the center of the paratha.

Then add sliced onion.

Add a little green chutney and sprinkle chaat masala on top.

Tightly roll the paratha and wrap it in parchment paper.

Cut the roll into two halves.
