Start with 6 cups of hot water in a big bowl.

Add 3/4 cup kosher salt, 1 cup dark brown sugar, and 1 tablespoon cinnamon to the hot water.

Stir and whisk the mixture until well mixed together.

Let the brine cool down before adding the salmon to avoid cooking it prematurely.

Place the salmon fillet in a pan and pour the cooled brine over it.

Cover the salmon and place it in the refrigerator for 8 to 12 hours to brine.

After brining, rinse the salmon with water to remove excess brine and pat it dry with paper towels.

Let the salmon rest uncovered in the refrigerator for 2 to 4 hours to develop a shiny sheen on the surface.

Cut the salmon into two pieces to fit into the skillet if necessary.

Let the salmon rest at room temperature for about 20 minutes before cooking.

Melt 4 tablespoons of butter in the skillet once it reaches 350 degrees Fahrenheit.

Place the salmon fillets in the skillet and set a timer for 16 minutes, flipping after 8 minutes.
