Heat the wok.

Add a couple of tablespoons of peanut oil to the wok.

Blend water chestnuts instead of chopping them.

Add chopped mushrooms, garlic, ginger, and chili to the wok.

Add chicken mince and pork mince to the wok, breaking it up as it cooks.

Mix in the blended water chestnuts, bean sprouts, chopped shallots, chinese cabbage, and mushrooms.

Add soy sauce, oyster sauce, and sesame oil to the mixture.

Let the sauce dissipate a little in the wok.

Prepare iceberg lettuce by pulling off leaves to make cups and washing them, then chill in the fridge.

Spoon the mixture into the lettuce cups and top with chopped spring onions and peanuts.
