Today, I will make a beef curry with pumpkin and potatoes.

I have chopped the ingredients finely and cut two tomatoes into long pieces.

I have also cut five to six potatoes into rounds.

Next, I will heat the clay pot and add about 2 tablespoons of oil.

Then, I will add all the chopped potatoes and half a teaspoon of turmeric powder and half a teaspoon of salt.

I will mix the turmeric and salt well with the potatoes and fry them.

I will add all the pumpkin pieces and then add another teaspoon of turmeric powder and a teaspoon of salt, mixing well before frying them too.

After frying, I will remove them onto a plate.

In the same clay pot, I will add the beef fat and fry it until the oil starts to come out.

Next, I will add bay leaves and some whole spices: cinnamon, cloves, and nutmeg, and fry them well with the fat.

Then, I will add all the chopped onions and fry them until they are well cooked.

After that, I will add all the beef and mix it well, frying it thoroughly.

As the beef cooks, some water will start to come out.

Now, I will add about 2 tablespoons of ginger-garlic paste and mix it well before frying again.

As the beef fries, the oil will start to come out from the fat.

Now, I will add the spices: 1 teaspoon of turmeric powder, 1 teaspoon of coriander powder, 1 teaspoon of cumin powder, and 1 teaspoon of red chili powder.

Then, I will add about 2 tablespoons of salt and mix everything well.

I will cook the beef with the spices until it gets a nice color and flavor.

Next, I will add the chopped tomatoes and cook them with the beef for 2-3 minutes.

After that, I will add about 1 bowl of yogurt and mix it well with the beef, ensuring the yogurt flavor is well incorporated for about 10 minutes.

Then, I will add about 1 glass of water to help tenderize the beef and mix it well.

I will cover it and let it cook for 10-15 minutes.

After 10-15 minutes, I will check and see that a nice gravy has formed and the beef is tender.

Now, I will cook it uncovered to thicken the gravy.

I will add the fried pumpkin and potatoes back into the pot and mix them well with the beef.

I will let it cook for another 10-15 minutes to enhance the flavors.

Finally, I will add about 1 teaspoon of garam masala and cover it for another 15 minutes on low heat.

After 15 minutes, I will check and see that the dish is delicious and ready to serve with rice or bread.
