3 cups basmati rice
3 teaspoons salt
4 cups water

Heat 150 ml mustard oil in a pot until hot.

Add 5-6 cloves, 15 black peppercorns, 2 pieces of cinnamon, 5 green cardamom pods, 1 teaspoon cumin seeds, and 2 bay leaves; sauté on low heat until fragrant.

Add 1 large finely sliced onion and fry until softened, but not browned.

Prepare a spice paste with 20-25 garlic cloves, 2-inch piece of ginger, 10 black peppercorns, 2 large cardamom pods, 4 green cardamom pods, 4 cloves, 1 small piece of cinnamon, 1 piece of mace, 1 small piece of nutmeg, 1 teaspoon cumin seeds, 1 tablespoon fennel seeds, and 2 teaspoons coriander seeds blended with water.

Add the spice paste to the onions and sauté until the water evaporates, about 2 minutes.

Add 5-6 slit green chilies and 3 cups of green peas; sauté for half a minute.

Stir in 3 tablespoons of yogurt and sauté for another minute.

Add 2 medium-sized diced tomatoes and salt to taste, approximately 3 teaspoons.

Add 3 cups of soaked basmati rice, mixing well with the spices.

Add juice of 1/2 lemon and 4 cups of water, ensuring the water level is about 1 inch above the rice.

Cover and bring to a boil on high heat, then reduce to medium heat and cook for 7-8 minutes until water is absorbed.

Add 1 tablespoon of kewra water mixed with 2 pinches of food color on top of the rice.

Cover with aluminum foil and cook on low heat for 10-12 minutes, optionally placing a tava underneath to prevent sticking.

Let it rest for 10 minutes before serving, fluffing the rice gently.
