Heat 200 ml of oil in a pot.

Add 2 finely chopped medium-sized onions and cook until light golden brown, reserving 25% of the fried onions for later.

Add 1/2 tsp white cumin, 2 bay leaves, 1-inch cinnamon stick, 5-6 black peppercorns, and sauté for 3-4 seconds until fragrant.

Add chopped ginger (2-inch piece) and 15-20 cloves of garlic; mix well and sauté for a minute.

Add 200 grams of green peas and sauté for 2-3 minutes with the spices.

Add 1 cup of water and 1 tsp salt to the mixture and bring to a boil.

Once boiling, reduce the heat and let the peas cook on low flame for 5 minutes until tender.

Add 1 cup of soaked basmati rice (soaked for 30 minutes) to the pot and mix gently.

Add 4 cups of water (1 cup of water for every 1/2 cup of rice) and the juice of 1/2 lemon; mix well.

Bring the mixture to a boil again, then reduce the heat to medium and cook for 5 minutes.

After 5 minutes, add the reserved fried onions and 1 tbsp of chopped coriander leaves.

Optionally, add 1 tsp of kewra water and 1/4 tsp of orange food color for color and flavor.

Cover the pot and cook on low flame for 10 minutes.

After 10 minutes, turn off the heat and let the rice sit for another 10-15 minutes before serving.
