Chakhchoukha is a traditional dish from Algeria, particularly popular in the Saharan regions. It embodies the nomadic lifestyle, using simple ingredients that are hearty and nourishing. Often served during special occasions and family gatherings, it reflects the communal spirit of Algerian dining. Today, variations exist across North Africa, with many enjoying it as a comforting meal at home or in restaurants.

Heat olive oil in a saucepan over medium heat.
Add onion and garlic, then add the meat pieces seasoned with salt, pepper, ras el hanout, and paprika.
Let it cook for 5 minutes.
Add chickpeas and grated tomato, and let it cook for 10 minutes.
Add jalapeno or any other hot pepper (optional).
Pour in boiled water until it covers the meat and vegetables.
Cover and let it cook for about 45 minutes or until the meat and chickpeas are cooked.
Meanwhile, tear the flatbread into small pieces and place them in a steamer.
Steam the flatbread pieces for about 5 minutes.
Put the steamed flatbread pieces in a serving dish and set aside.
Check the sauce, adjust seasoning, and add salt if needed.
Once thickened and reduced, place the meat on top of the steamed flatbread, add chickpeas around, and pour some sauce on top.
