Clean prawns and season with salt, pepper and soy sauce. Set aside until you prepare the other ingredients.

In a large saucepan, rinse uncooked rice with cool water until it runs clear, then add water and bring to boil. Cook until the grains are just soft and spread on a plate and allow to cool completely.

Prepare the veggies - Wash and chop finely.

Beat 3 eggs in a bowl and season with salt and pepper.

Heat a wok or large skillet over high heat. Add egg and prepare scrambled egg. Transfer to a plate.

Add oil to the same wok and heat. Stir fry the prawns, then add garlic and chilli. Saute for half a minute.

Add all the veggies and stir fry for 2-3 minutes on medium high heat.

Add in the cool rice, sauces and mix well until no white rice is visible.

Add in the scrambled egg, mix everything and turn off the heat.

Garnish with green onions and serve immediately.
